Avocado dressing

WOW!
I created this Avocado Dressing
to go with our Dinner Salad’s last night
and it is my new favorite dressing!!
I think it will work with lots of dinners too 🙂

My 7 year old
kept asking for more
and was dipping all his veggies
and homemade croutons
(recipe tomorrow!)
in it!
I might have a new addiction!
It is full of healthy fats
and good for you
with all natural and fresh ingredients
and it will be delicious on all sorts of dishes
from Salads, to tacos, to chicken
Anything you would eat with salad dressing 
(or dip in salad dressing)
or put avocados on!
We are using what was leftover last night
for Taco night tomorrow
and then I went and picked up another avocado
to make some for the Chicken Skewers
we are having this weekend for
my in-laws 40th Wedding Anniversary Party
I know the chicken will be excellent
dipped in this
(we were dipping the chicken from our salads in it last night)
Mmmm…
This is going to be my new salad dressing

Keep in mind
I didn’t measure ANYTHING
just eyeballed it
(I’ll give approximate amounts)
Don’t be too worried about exact measurements
when in doubt put in less
then you can always add more to it
but it is hard to take away!
Ingredients:
  • 1 Avocado
  • 1/4-1/2 Cup Plain Greek Yogurt (I put 2 very large spoonfuls – the big spoons in my silverware drawer)
  • 1/4 cup Extra Virgin Olive Oil
  • Garlic – to taste – probably 3 cloves is what I did
  • 2 good squirts of Lemon Juice – fresh would be best, but I just used the stuff in the bottle, since I didn’t have any lemons at the moment
  • Dash of Salt
  • Few drops of Hot Sauce
I put all that together into my food processor and blended. could also use a stick blender or just a regular blender. I am sure a mixer would also work well to bring it together. 
Adjust the levels to your desired thickness. You won’t be disappointed! It is yummy – and if my 7 year old is dipping veggies into it, it must be good! Easy, Healthy, and Delicious!
