Cream cheese and blueberry stuffed French toast

I think just about everyone loves French Toast
I love that it is easy, delicious,
and uses up old bread 🙂

We have “Brinner”
around here often
(breakfast for dinner)
It is probably my kids favorite dinner food
We had some blueberries in
our first Bountiful Basket
(YAY! they finally made their way here to our town!)
and some old bread to use up
so I decided to make
cream cheese and blueberry stuffed
French Toast
Mmmm…
first time trying to make something like this
and it was yummy
(I do a baked french toast that is similar)
Do you really need a recipe?
I mean,
It is super simple
I will give you a rough estimate of how we made it
but I measured nothing
so yeah…
just do it all until it looks good 🙂
Ingredients: (remember these are approximate – I didn’t measure)
4 eggs
1/2 – 1 cup milk
Cinnamon and/or nutmeg
8oz low fat cream cheese
package of blueberries – or any fruit would work. Strawberries would be delicious also!
a loaf of old bread (we had a loaf of Whole Wheat)
Directions:
Now I didn’t do this, but if I were to do it again, I would either use the tub (ie. easier to spread) cream cheese, or whip my brick of cream cheese up first. Again, I didn’t do this, but next time I will.
Whisk your eggs. Add in milk until it looks like the right amount to you (I am thinking probably around 1 cup) Add in cinnamon or nutmeg (whichever you prefer) and whisk until combined. Heat your pan or griddle. Take a slice of bread and spread your cream cheese on it. Now sprinkle as many or few blueberries (or other fruit) as you want onto the cream cheese. Top with another piece of bread – like a cream cheese/fruit sandwich. Dip the whole sandwich into the egg/milk mixture and place on your hot griddle or pan. Flip the sandwich, once one side is golden brown. Finished when both sides are golden and delicious looking.
