Indian Butter Chicken

I could go to an Indian Restaurant
and get get a sampling of the different sauces
and Naan and be perfectly happy
Mmmm….

Unfortunately,
I have yet to find an Indian Restaurant to offer that!
However,
in my many visits to Indian style restaurants
Butter Chicken is one of my favorites
I have even been know to ask for 
this and some Naan for my Birthday dinner
YUM!
My Husband is the weekend chef around here
he always cooks ethnic foods
and experiments
So this is his recipe
FYI – the leftovers
are DELICIOUS
on pizza
Make up the 5 minute Pizza Dough,
pour this on top,
and put some Mozzarella on
Oh.MY.
it might be the best ever pizza 🙂
Ingredients:
1 lb chicken, cubed
2 cans (14oz) stewed Tomatoes (we have even used fresh tomatoes)
1 onion, chopped
Garlic – to taste (us 3-4 cloves!)
Ginger – 1 inch piece, minced
3 TBSP Garam Masala
3 TBSP butter
lemon juice
1/2 cup cream
Directions:
Melt the butter in a pan and saute the onions and garlic until onions are translucent. Add in the chicken and cook. Add the Garam Masala to the chicken. Add in the tomatoes and a squirt or two of lemon juice. Let cook for a few minutes. Add in the cream just before serving. I just eyeball the cream. 
YUM! Serve over rice and soak up the sauce with some Naan! Serve leftovers on pizza (if there are any, or just make a double batch)
