Crockpot Bourbon Chicken

I started my love of Bourbon chicken
when I was in a Mall food court
and a restaurant offered samples of their chicken
Yeah, you’ve all seen it.
but that sample of Bourbon Chicken
got me hooked!

Well,
we don’t have a mall
or any places that make Bourbon Chicken,
so we NEEDED to learn how to make it!
The great thing about Bourbon chicken?
It lends itself really well to being
cooked in a slow cooker
It really helps the flavors
come together by cooking slowly!

 

Made this Bourbon Chicken last night
and my husband went back for
THIRDS!
I may have to put double the chicken in next time
’cause leftovers are always yummy ๐Ÿ™‚
and there is plenty of sauce for double the chicken!
Mmmm…
I am wishing I had some more right now!
Serve over rice

 

Ingredients:
  • 1lb of chicken (could do up to 2lbs with the amount of sauce it makes!)
  • 1 tsp garlic – more or less to your liking..
  • 1/2 tsp ginger
  • a pinch of crushed Red Pepper flakes
  • 1/4 cup apple juice
  • 1/2 cup brown sugar
  • 2 Tbsp Ketchup (I just eyeballed it)
  • 1 Tbsp apple cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 2 tbsp cornstarch

 

Directions:
I put all the ingredients, except the chicken and the cornstarch, into my crockpotย and mixed it into a sauce. Then I put my chicken into the sauce (It was half frozen :P). Cook on high 4-6 hours, low 8-10. About an hour or so before eating, take the cornstarch in a cup or bowl and add a couple of spoonfuls of the sauce to it. Mix until dissolved. Then add it to the chicken and let cook the rest of the time. You can skip the cornstarch, if you don’t have the time – your sauce will just be thinner, but still delicious ๐Ÿ™‚ Serve over some rice.

      I cut my chicken up and then freeze it. So then I take it out of the freezer all ready to go. So, If you have unfrozen chicken, you can cut it up first if you’d like. If it’s frozen, you could simply shred up the chicken in the sauce once it’s cooked ๐Ÿ˜Š
