Crockpot pesto chicken

I realized yesterday
that I am behind in writing up
all the crockpot meals we’ve done this summer!
Well,
summer technically doesn’t end
until late September
So I am still good 🙂
Our kids aren’t even back to school until next week!

This was an extremely easy
and very tasty dinner!
I actually did double the chicken
that I would normally do
because I figured there would be plenty of sauce
(which there was!)
and leave some for lunches this week.
Easy.
Simple.
Delicious.
Make some Mashed Potatoes
to go with it
and pour some of the sauce on them
Mmmmm….
Ingredients
  • 2lbs Chicken (I used cubed up chicken breasts, but you could do whole breasts, or thighs)
  • 6 oz Jar of Pesto 
  • 1 pkg Ranch dressing mix
  • 1/2 – 1 cup chicken broth (depending on how much sauce you want!)
Place the chicken in your crockpot (if you’re me, the chicken is still mostly frozen :P). Pour on the Pesto and ranch dressing mix. Top it off with the chicken broth. Cook on high 4-6 hrs and low 8-10hrs. 
Serve with Mashed Potatoes – trust me on that one 🙂
