Magic 7 (or 8) layer bars

Yesterday,
was my oldest boy
(my 2nd child)
8th Birthday!
He is having a cake for his birthday party
in a couple of weeks
(pictures to come!)
So he got to choose what treat he wanted for his birthday
He chose 7 layer bars
Yep – 
He’s my boy!

I adore 7 layer bars
They are just so much goodness wrapped up in one bar
I usually only make them to take and share
because I will eat the entire pan
(would be delicious, but not good for my health!)
He decided to add an 8th layer
for his 8th birthday
He added Marshmallows up on top
while they were warm.
so they got soft 🙂
Ingredients:
  • 1/2 cup butter
  • 1 1/2 cups graham cracker crumbs
  • 1 14oz can sweetened condensed milk
  • 1 cup chocolate chips
  • 1 cup butterscotch chips (or peanut butter chips or toffee chips – whatever your preference!)
  • 1 1/3 cup flaked coconut
  • 1 cup chopped nuts (optional – we never add this. We are not big fans of nuts in our desserts)
Directions:
Heat oven to 350. 
Melt the butter. I just melt it in the preheating oven in my 13×9 pan. Mix the butter and the graham cracker crumbs. Again I just do this in the pan, but you could do it in a bowl. Smash the butter crumb mixture into the bottom of your 13×9 pan. Evenly pour the sweetened condensed milk over the pressed crumb mixture. Sprinkle your two different types of chips over the milk. Add the nuts and coconut. Press all ingredients down with a fork (or your fingers in my case!)
Bake for 25-30 minutes until lightly browned. Cool and cut into bars… try not to eat the entire pan yourself 🙂 (although, I wouldn’t blame you if you did!) If you want to be like my son, add some marshmallows once out of the oven, or if you want them toasty, add on top the last 10 or so minutes of baking 🙂 I accidentally baked these ones last night a bit longer (they are a bit darker than normal). That is what I get for Skyping with my family while baking with no timer running to warn me it’s done!
