Sticky Toffee pudding

It was our 13th wedding anniversary
this weekend
I am currently trying not to eat chocolate
so I made my FAVORITE
non-chocolate dessert
Sticky Toffee Pudding
So freaking delicious 🙂

 I would probably even choose this dessert
over something with chocolate

It is that GOOD!
It is a popular dessert in England
I think it should be more popular here!
Plus,
it has dates in it,
so it is good for you right?
Then the toffee (caramel) sauce on top
Mmmmm…
I am going to go eat some of the leftovers now!
Ingredients:
  • 3/4 cup pitted dates
  • 1 1/4 cup boiling water
  • 1 tsp baking soda
  • 1/4 cup butter – softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup plus 1 tbsp flour
  • 1 tsp baking powder
Toffee sauce ingredients
  • 1/2 cup butter
  • 1/2 cup cream
  • 1 cup packed brown sugar
  • whipped cream for the top!
Directions:
Preheat oven to 350. Spray a 2qt baking dish (round or square) with some cooking spray. Chop your dates very fine (or in a food processor) Place the dates in a small bowl and put the boiling water over the dates and add the baking soda. Set that bowl aside.
In a larger bowl  (or your mixer), beat together the butter and sugar until light and fluffy. Add in the egg and vanilla. Beat until well blended. Add in the flour and baking powder until combined. Add in the date mixture and fold into the batter until combined. Pour into the baking dish. Bake until set and firm on top, about 35 minutes (last night, it took 40 minutes).  
Toffee sauce – combine the butter, cream, and brown sugar in a small sauce pan and heat to boiling, stirring constantly. Boil gently over medium heat, until thickened, about 8 minutes. Preheat your boiler. Spoon about 1/3 of the sauce over the cake and place the cake under the broiler until the sauce is bubbling, about 1-2 minutes. Serve immediately – spoon into bowls, drizzle with more toffee sauce and top it off with some whipped cream!
