Homemade caramel chocolate dipped pretzels

One night
I got a craving
for some caramel covered pretzels

So what did I do?
I went to the kitchen to experiment!
This is nothing I had tried to make before
but I LOVE homemade caramel
and we had a LARGE bag of pretzels
from Costco to use…
I originally
was going to dip these in chocolate
but it started to get late
and I didn’t want to wait for the Caramel to cool enough
(and we didn’t have freezer space to speed it up!)
so sleepiness took over
and I just drizzled the chocolate over the top 
The problem with these
they are so freaking delicious
and munch-able
you will eat 20 before you even realize it!
Ingredients
  • Bag of Pretzels
  • 1 Cup of Butter
  • 1 Cup Brown Sugar
  • 1 Cup Light Corn Syrup
  • 14oz can Sweetened Condensed Milk
  • Chocolate for dipping or drizzling
Directions:
Mix all the ingredients except the pretzels and chocolate, in a medium saucepan. Bring the ingredients to a boil, stirring constantly until it hits the soft ball stage or 235 degrees on a thermometer (I have a fancy electric one)
Now comes the dipping. I tried dipping one at a time. That would have taken WAY too long. So I tossed the pretzels in the saucepan by the handful, coated them in the caramel with a spoon, and then pulled them out one at a time with a chopstick/bamboo skewer and set them on some greased wax paper to cool (see picture below:

Now they are perfectly delicious JUST like this – in fact, my husband and I were eating them just like this while we were waiting for them to cool
Then I got sleepy, and wanted to go to bed, so I didn’t wait for them to cool, and just microwaved a couple of handfuls of Semi-Sweet Chocolate Chips in the microwave (stir every 30 seconds) until melted. Then I just drizzled it over the pretzels. SO.FREAKING.GOOD!!!
Now if you do this at a decent time and want to dip these, wait for them to cool, or place them in the freezer to get them to harden (That is what I would have done, had I had freezer space!) and then dip the entire pretzel in chocolate.  You could even add sprinkles, or other decoration to the top of the chocolate before it cools.
Now don’t blame me if you can’t stop eating these….
