Zucchini fritters

I always have a hard time with side dishes
Usually we just have raw fruits and veggies
and maybe some homemade bread

I made these Zucchini Fritters
and I fell in love!
They are DELICIOUS
I was eating them right out of the pan
before we even sat down to dinner
(I HAD to be sure they were edible)
and for this mom
who is not a big “veggie” lover
this was a GREAT way to make up our veggies
and I will even eat them
(by eat, I mean I scarfed them down!)
Try them out
with all that Zucchini you have in your garden
or that your gardening friends are trying to get rid of 🙂
Ingredients:
  • Olive or Canola Oil for frying (I used Olive Oil)
  • 3 cups Grated Zucchini
  • 1 small onion, diced (I had JUST run out of onion for the ones in the pictures- I used it on the main dish and realized it was the last I had in the house 😛 So this is still great if you are out of onion!)
  • 2 eggs
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • Pepper to your liking (I just crack some into the mix)
Directions:
Take your Zucchini and onion and toss it with the flour, baking powder, chili powder, salt, and pepper in a bowl. Once tossed and coated, add in the egg and thoroughly mix. Heat the oil in a saute pan over medium high heat. I just used a spoon and spooned the mixture into the oil. Flip to the other side, when first side is golden brown – it doesn’t take long, 3-5 minutes. They are done when both sides are golden brown,
Mmm… These are DELICIOUS! Just writing this up makes me want to go cook up some more right now (I think it is time for some lunch!)
