Zucchini pizza casserole

Another Zucchini recipe!
You can tell we have alot of Zucchini to use up around here!

This Zucchini pizza
was so freaking delicious
that I *might*
even like it better than regular pizza!
I was SHOCKED
That I loved this so much!
But it was gooooood!!
Considering I think pizza is one of the
best foods created
(along with anything chocolate)
This is a great recipe
to even be considered in that league!

 

You can make it with the toppings described below
or make your own toppings!
Sky is the limit when you are talking about pizza!
Top the pizza crust with whatever you’d like

 

Ingredients:

 

  • 4 cups shredded zucchini (I peeled mine first)
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef, turkey, or chicken or cubed chicken (I used cubed chicken in the picture
  • 1 onion, chopped
  • 2 cups Pasta Sauce
  • 1 green pepper, chopped (optional)

 

Directions:

 

Place the zucchini in a strainer and sprinkle it with salt. Let it stand for 10-30 minutes. Place the zucchini in a towel and squeeze out any excess moisture. It is VERY important to get all the liquid out!

 

Combine the zucchini with the eggs, the Parmesan, and half the mozzarella and cheddar cheese. Place the mixture into a greased 13×9 baking dish. Bake uncovered at 400 degrees for 20-30 minutes, depending on how crisp you want your crust. Here is what mine looked like when I took it out:

 

While the crust is cooking, cook your meat, green pepper, and onion in a saute pan over medium heat until cooked. I sprinkle some Montreal steak seasoning and garlic in while I am cooking, but I do that when cooking almost any meat! Add in your pasta sauce – I didn’t really measure, just until it had enough sauce to my liking πŸ™‚ Β Spoon your meat/sauce over your cooked zucchini crust. Sprinkle the rest of the cheese over the top of the crust. Bake another 15-20 minutes, or until heated through.

 

YUM! You won’t even realize you are eating so many veggies πŸ™‚
