Sugar Cookie bars

 My 3 year old went with me to the grocery store
and got a cookie while we were shopping
They gave him one of those LoftHouse cookies
and he didn’t want to eat it all,
so I ate the last bite of it

Dang it!

It was good 
and when I got home
I had a craving for another one
So I decided to make some of our own
only in bar form because it is faster 🙂
I mean these bars bake up in about 10 minutes!
They turned out delicious
and now looking at the pictures again
my 3 year old is like:
“I want to eat that! Let’s go make some more!”
So I may be making some more of these this afternoon!
Ingredients:
  • 3/4 cups softened butter
  • 3/4 cup sugar
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
Frosting
  • 6 TBSP softened butter
  • 2 1/2 cup powdered sugar
  • 2-3 TBSP milk
  • Food Coloring (optional)
Directions:
Heat oven to 350. In your mixer, cream together your butter, sugar, and powdered sugar until light and fluffy. Stir in the eggs and vanilla until combined. Add in the flour, baking powder, and salt, until combined. 
Spray a 13×9 pan with cooking spray. Spread and press the dough evenly into the pan. Bake 10-14 minutes. Be sure not to overbake. Take out just before there is any color on the edges and the dough it just set in the middle. Let the bars cool.
To make the frosting, mix the butter and the sugar together. Add in milk until you get your desired consistency and whip until light and fluffy. Add any food coloring you desire. Top the bars with the frosting. EAT!
