Crockpot creamy potato soup

I love potato soup
Easy, cheap, and delicious
The creamy goodness just warms me up on a cold day!

All you need is some potatoes
and broth
and you have potato soup
Then you add things to it as you desire
This recipe I tried the other night and
it is my new favorite way to make it!
Creamy and delicious
and I always have everything on hand!
Plus it is so easy –
the hardest thing you have to do
is peel the potatoes
Toss some in your crockpot today
and enjoy a yummy soup for dinner tonight 🙂
Ingredients:
  • 4-8 potatoes – Depends on the size. Mine were very small russet potatoes, so I ended up using 7
  • 1 Quart of Chicken Broth
  • 1 can Cream of Chicken soup
  • 1 small onion, chopped
  • 1 8oz pkg of Cream Cheese (I used reduced fat)
  • Cheese
  • Green Onion (optional)
  • Cooked Bacon or Ham (optional)
Directions:
Wash and peel your potatoes. Cut int large squares (they will break down – my small potatoes were cut into like 8-12 cubes). Pour the broth and the cream of chicken soup into the crockpot and add the potatoes and onion. Cook on high 4-6 hours, low 8-10 hours. Add in the cream cheese (I REALLY liked the cream cheese – it was my first time trying it and since I often have cream cheese on hand, and rarely have cream, this was a great addition to the soup!) about an hour before it is done cooking. If you want any bacon or ham to your soup (I didn’t this time, but if you want some or have it in your fridge) add it in then too! Before serving, I garnished the soup with some cheddar cheese and green onion.
Enjoy! I served it with some fresh, hot homemade whole wheat bread….. Mmmmmm….
