Tex-mex chicken and rice

This was a new recipe for us
I liked it!
I think it will be a great base recipe for us
that we can change up in different ways

I always try and do that with new recipes
How could I make this better?
What could we change?
I am always trying to tweak things….
My 8 year old ate 3 servings
and my 10 year old didn’t complain about eating it!
I am thinking it would also be delicious
with taco meat
(ground beef/chicken/turkey cooked in taco seasoning)
instead of the chicken
I think I am going to put the leftovers in some tortillas
and make them into taquitos
It would also be excellent served with tortilla chips
This is an easy crowd pleaser
and my new go to
when I need to take someone a meal
or to a potluck!
Ingredients
  • 1lb Chicken – next time I am going to use 1lb ground chicken/beef/turkey and cook it in taco seasoning
  • Garlic to taste (3-4 cloves for me)
  • 4 cups cooked rice – I took 2 cups dried rice, 4 cups of water and cooked in my rice cooker
  • 1 cup sour cream (I used low fat)
  • 1 cup Salsa (I used Pace Picante)
  • 1 can Black Beans, drained and rinsed
  • 1 can Corn, drained
  • Cheese – 1.5 – 2 cups
Directions:
Heat oven to 350
Cook the chicken with the garlic until cooked through (or cook with taco seasoning). Now I don’t like to mess up more dishes than necessary, so I took my 13×9 pan and mixed the sour cream and the salsa together. I then added the black beans, corn, chicken and about 1 – 1.5 cups of cheese and mixed it together. Then I added the rice and thoroughly mixed it all together until completely combined. I then added another 1/2 or so of cheese sprinkled on top (I didn’t measure, just until it looks good to you). Bake in the oven until heated through, about 30 minutes or so. 
Enjoy! It is creamy and delicious. Serve it in tortillas, or with some tortilla chips, or just by itself with a salad.
