Creamy tomato and spinach pasta

This is a new recipe I tried
And my 8 year old
Ate over 3 helpings!
He loved it!
There were not any leftovers
With this meal!

It is EASY and CHEAP
to make to boot!
Plus,
we love having several vegetarian nights a week
and this dish will fit in nicely!
We didn’t even notice
or mind that there was no meat!
Of course,
you could easily add chicken into the recipe if you wish!
Ingredients:
  • 1 onion chopped
  • Garlic, chopped – to taste (2-3 cloves)
  • 1 tbsp Olive Oil
  • 1 15 oz can diced tomatoes or you could easily use fresh tomatoes
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • fresh cracked black pepper
  • 2-3 oz cream cheese
  • 1/2 cup cream
  • 1/4 cup Parmesan cheese
  • 1 lb penne pasta
  • 1/2 10oz bag of Spinach (or use the whole thing!)
Directions:
Heat a large pot of water and bring it to a boil. Cook the pasta according to directions (I use whole wheat pasta) – drain when done cooking. While the pasta is cooking, saute the onion and garlic in the olive oil until soft and translucent, about 5 minutes. Add in the tomatoes, basil, oregano, pepper. Stir and then add in the Cream cheese and Parmesan cheese. Once that is melted and incorporated, add in the cream. I added the cream as a last minute addition, because I thought the dish needed some more sauce. Add in the spinach, and slowly toss with the sauce until just wilted. I only used 1/2 the bag, but while we were eating, we noted you could easily have more spinach in the dish, if you wanted! Add in the pasta and toss the whole thing together.  I did add a little mozzarella on the top, but I don’t think it is necessary for the dish (we just had some that needed used in the fridge!)
ENJOY. Serve with with some garlic bread and you have a delicious meal!
