Soft, White chocolate dipped ginger snaps

These are my favorite
non-chocolate cookies!
and I may have just eaten so many after making these
that I am not feeling so great right now 😛
But looking at the pictures makes me want to go eat some more
They are just downstairs calling my name!

I got this recipe from a friend
They brought over a plate of cookies
and these were on it
After my first bite
I emailed her saying I HAD to have the recipe
Thankfully,
She obliged!
These are in our Christmas Cookie baking cycle
but I like to eat them year round!
Mmmmm…

Ingredients:

 

  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 eggs
  • 1/2 cup molasses
  • 4 cups flour
  • 4 tsp baking soda
  • 1 Tbsp ginger
  • 2 tsp cinnamon
  • 1 tsp Salt
  • extra sugar for dipping cookie dough
  • White chocolate melting discs (I get them in bulk at Winco. You could use White chocolate chips and shortening according to directions on the bag, but I never have good luck with that 😛 The melting discs are pretty fool proof)

 

Directions:

 

Heat oven to 350

 

Mix everything (except the extra sugar and white chocolate) together. Simple right? Scoop your dough into balls (I use my trusty cookie scoop) and roll in sugar. Bake for 10-12 minutes.  Cool. Once cooled, melt your white chocolate and then dip the cookies half way in the chocolate. Place on wax paper for them to harden – doesn’t take very long.

 

Eat! Enjoy! Try not to eat half a dozen as soon as they are done like I do 😛
