White bean turkey chili

So I am a little late in posting this 😛
Here is one of the things we made with some Turkey Leftovers
from Thanksgiving
White bean turkey chili
This could easily be made with Chicken
or just no meat and make it vegetarian!
I am not a big fan of “regular” Chili
but I do rather enjoy White chili’s 🙂
Plus this is another
“Just throw it in the crockpot
and let it cook meals”
Which I really enjoy!
My 8 year old ate 2 bowlfuls
and my 10 year old didn’t complain as much as usual
about eating,
So I would call it success 🙂
White bean turkey chili Ingredients:
  • 2 15oz cans of white beans, drained and rinsed – I used Great Northern and Butter
  • 1 lb of Turkey or Chicken (either uncooked or cooked is fine!)
  • 1 can of corn, drained
  • 1 chopped onion
  • Garlic to taste (2-4 cloves)
  • 1 pkg. or 1/4 cup Taco Seasoning
  • 1 Can Cream of Chicken soup
  • 1 14oz can of Chicken Broth
Directions:
Toss all the ingredients in the slow cooker, stir and cook on high 4-6 hrs or low 8-10. Seriously LOVE the dump all ingredients in and cook ability of the slow cooker!  You could serve with cheese on top (we didn’t, but it would be delicious!), sour cream, and some chips… or whatever toppings you come up with! Even a side of cornbread would be delicious!
