Italian chicken casserole

This is a pretty tasty dish
The leftovers are sitting in my fridge right now..
Calling my name

My husband and kids ate this up!
Creamy, cheesy, delicious!
Great way to “fancy” up
your typical spaghetti dinner
It was hard to stop eating
so be warned.

 

Ingredients:

 

  • 1 Onion, chopped
  • 3-4 cloves of Garlic
  • 1 lb of cubed Chicken
  • 2 14oz cans Tomatoes
  • 1 cup Cream
  • 3oz Cream Cheese
  • 2 cups Mozzarella
  • 8 oz Angel Hair Pasta (I use Whole Wheat)

 

Directions:

 

Heat oven to 350. Place a large pot of water on the stove to boil

 

Cook the onion, garlic, and chicken together until cooked through. Meanwhile, cook your pasta according to box directions, in the pot of boiling water – drain and keep warm when done cooking. Once chicken is cooked, add the tomatoes and cream, bring to a boil and then reduce to a simmer and cook until starts to thicken – about 10 minutes. Add the cream cheese and 1 cup of the mozzarella. Stir until melted. Add in the pasta and stir until thoroughly coated and incorporated. Place the pasta mixture into a 13×9 pan and sprinkle the rest of the mozzarella over the top of the pasta. Bake in the oven for about 30 minutes.
