Cream cheese ranch taquitos

Whenever we buy a rotisserie chicken
or bake a whole chicken
We always have leftovers
and these taquitos are our favorite thing to do with those leftovers!

This is a really great meal to stretch your buck!
You buy a whole chicken to eat for dinner
(either for $5 from Costco, or make it yourself cheap)
and then use the leftover chicken to make this
Really any shredded chicken will work for these
Since I usually use leftover chicken that is already seasoned
I don’t add much to these
So they are simple
and incredibly easy to make
and did I mention
Delicious??
Now how much to make depends on how much chicken you have
I am going to estimate that we usually have a pound or so worth of chicken left
but just adjust the recipe depending on how much chicken you have
Ingredients:
  • 3/4lb – 1lb Leftover Shredded Chicken (or any shredded chicken)
  • 1 8oz pkg of Cream Cheese (I use low fat) – let soften
  • 1 pkg. Dry Ranch Mix
  • Tortillas (I usually get about 8-10 taquitos)
Directions:
Heat oven to 400
Mix your chicken, softened cream cheese, and dry ranch together. Eat. Ha! Just kidding (well, only kind of – it is good before baking in the taquitos). Spread the mixture on a tortilla and wrap up tightly. Leave room at the ends of the tortilla, because it will try to escape the ends while it bakes! Place on a foil lined baking sheet (otherwise, if some of the mixture does escape out the end, it makes a baked on mess – with the foil, you just toss it, instead of trying to get the mess off your baking sheet!) Bake in the oven about 15-20 minutes, until they start to brown and crisp on the top.
