Crouton Chicken

I LOVE Croutons
They are the whole reason for eating a salad!

One day it dawned on me
Why not coat my chicken in croutons
instead of breadcrumbs?!?!
A light bulb went off
and I am happy to say it is a delicious success!
We often buy the big bag of croutons
from Costco
especially if we are making my
but there is always alot of crumbs at the bottom of the bag!
Well,
don’t throw them out!!
Use them to coat your chicken!
YUM!!
If you don’t have a bunch of crumbs laying around
just crush some croutons in a bag
or use your trusty food processor to
grind up a small bag of croutons!
Serve with mashed potatoes
or a Salad 🙂
Salad, crouton chicken
Sounds like a match made in salad heaven
Ingredients:
  • Chicken Breasts – 1 breast for each person eating
  • 1 beaten egg
  • Crouton crumbs – either from the bottom of a Costco size bag, or grind up/crush your favorite flavor of croutons 
  • Olive oil
Directions:
Pound your chicken breasts thin – they will stay moister, and cook faster the thinner they are. Plus, I like a high crouton to chicken ratio 🙂 Heat a saute pan to medium high heat and coat the bottom with a very thin layer of Olive oil. Dip your chicken breasts in the egg and then coat each breast with crouton crumbs. Place is heated pan. Cook on each side until starts to brown – probably 4-5 minutes. Flip chicken breast and cook until slightly brown on other side. As long as you pounded the chicken thin, these should not take long to cook through! Place on a paper towel once cooked.
