Thai peanut noodles

This is one of my all time FAVORITE meals
It is so easy
so versatile
and did I mention DELICIOUS?!?!?!

I know this recipe so well
I don’t have to look it up
or even measure anything anymore
It is such a favorite dish around here
we have it ALOT!
You can add veggies
or not
You can use chicken
or Tofu
Creamy Peanut Butter
or Crunchy
Ramen
or Angel Hair
Very Versatile
and easy to accommodate whatever you have in your kitchen!
Pair it with my Steam Buns
and you have an out of this world meal!
I love to open my warm steam bun
and stuff the noodles, chicken, and veggies inside
and eat like a sandwich

(yes my kids LOVE tofu!)
The most common way I make it is
Angel hair, chicken, veggies, and creamy Peanut Butter
I’ll have to remember to take a picture next time I make it that way 🙂
Ingredients:
  • 1lb chicken or tofu, cubed (don’t like tofu? Give it a try – it is DELICIOUS in this sauce and I bet you won’t be able to tell it’s tofu!)
  • 4-6 Oriental Ramen or a Pkg. of Angel Hair Pasta (I make one packet of Ramen per person, or just make up a bunch of Angel Hair)
  • 1/4 cup Soy Sauce
  • 1/4 cup Peanut butter – chunky or creamy, depending on preference
  • 1/2 tbsp cornstarch or flour
  • 1 cup of water
  • 1 packet or Oriental Seasoning from the Oriental Ramen (I either get from the packages we are using, or if making Angel Hair, we always have some laying around)
  • green onions (optional)
  • Veggies – I usually use frozen broccoli and cauliflower (optional, but they taste delicious in the sauce!)
  • a pinch of red chili flakes
Directions:
If using cubed chicken, cook chicken until done and set aside for a few minutes. Cook pasta according to directions, and drain water when done. While pasta is cooking, mix the peanut butter, soy sauce, and cornstarch/flour together in a pot (I use a Wok). Once cornstarch/flour is mixed in, add the water and Oriental seasoning packet, and a pinch of red chili flakes (if desired). Heat over medium high until just comes to a boil. If you have veggies, add them now and let them cook until desired tenderness. Add in the chicken/tofu. Once heated through, add the ramen/pasta and toss until pasta is coated in the sauce. Garnish with green onion, if desired
