Soft Peanut Butter cookies

Maybe it is the fact that I am trying to lose weight
(20lbs down!!)
but I think I could eat a whole dozen of these Soft Peanut Butter cookies
RIGHT NOW!


 

These are soft and delicious!
I use a timer,
to make sure that they don’t get overdone
because it is really easy to over cook these Peanut Butter cookies!

 

I even googled why we are supposed to criss cross
the tops of the cookies with a fork
It apparently is to spread out the dense dough
so it cooks evenly
So now I know
I always just did it because PB cookies always look like that
but now I know the reason behind it!

 

So go make up a batch of
Soft Peanut Butter cookies
and eat them up
I will enjoy them vicariously through you 🙂

 

Soft Peanut Butter Cookie Ingredients:

 

  • 3/4 cup Creamy Peanut Butter (you could also use chunky, if you like a little crunch!)
  • 1/2 cup Shortening
  • 1 1/4 cup firmly packed brown sugar
  • 3 tbsp milk
  • 1 tbsp vanilla
  • 1 egg
  • 1 3/4 cup all purpose flour
  • 3/4 tsp baking soda
  • 3/4 tsp salt

 

Directions:
Heat oven to 375

 

Combine the Peanut Butter, shortening, brown sugar, milk, and vanilla together. Beat on medium speed until well blended. Add in the egg. Beat until just blended. Add in the flour, baking soda, and salt on a low speed until combined.  Shape the dough into a ball and place on cookie sheet. Flatten the cookie in a criss cross pattern using a fork. I stick the fork in water between every few cookies to help keep the dough from sticking to the fork.

 

Bake for 7-8 minutes until the cookies are set and just starting to brown. Cool (if you can wait that long!) on the cookie sheet for 2 minutes and the put on cookie racks to cool. They never last long on the cookie racks around here!
