I think I have said before that Chicken and Dumplings is one of my favorite meals and it has been since I was a small child. I have written my favorite chicken and dumpling soup on here before – it is delicious and is just what I need when I am looking for comfort food.

I saw the idea of a Chicken and Dumpling casserole on Pinterest and knew I had to try it out. I love re-inventing my favorite meals.

This one was a HUGE hit! We polished of the entire pan! We almost always have leftovers for my husband to take for lunch the next day, but we polished the whole pan off – it was just sooooo good! Mmmm… My mouth is watering just thinking about it again!

So if you love Chicken and Dumplings, you are going to love this easy to make casserole. YUM!

 

Ingredients:

  • 1 lb Cooked, Shredded chicken (leftover rotisserie chicken would work well. or just cook and shred some chicken)
  • 1 14oz can of Chicken Broth
  • 1 can cream of chicken soup
  • 2 cups of flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 2 cups of milk

 

Directions:

Heat oven to 400. Spray/grease a 13×9 pan

Spread the shredded chicken in the bottom of the 13×9 pan. Mix together the flour, salt, baking powder, and milk. Pour over the chicken layer. Mix the broth and chicken soup together and then pour it over the dumpling layer. Do NOT stir the layers together. Place it into the oven and bake for 30-40 minutes until the top just starts to turn brown.
