Crockpot Hoisin Chicken

 

Oh yes!

I made this Crockpot Hoisin Chicken last night for dinner. I think I could have eaten the entire pot myself! I had to stop myself from eating it it all… My husband had the same problem… Soooo good and we were all in love with this dinner! Plus it is healthy as well! Healthy and delicious – a keeper for sure!

My son even asked for it in his lunch today at school. I know it must be good if he is willing to take it in his lunch. I obliged and he took it in his lunchbox today.

Mmmm.. It is my lunch today too. I love delicious leftovers, and this one is stellar. This recipe will be in our regular menu line-up from now on.

Seriously, so freaking delicious! And easy too! Just pour it all in the crockpot and let it cook! I even put the chicken in frozen. I did not measure the ingredients, just eyeballed all the ingredients – Doesn’t get easier than that!

Try it – you won’t regret it! Better than any restaurant food you can get 🙂

 

Ingredients:

  • 1-2lbs of chicken breasts
  • 1/3 cup soy
  • 1/3 cup Hoisin Sauce
  • 1/3 cup water
  • 2 Tbsp sugar or honey
  • 2 Tbsp ginger (fresh or ground)
  • garlic (to taste)
  • 1 tbsp cornstarch

 

Directions:

Just eyeball all the ingredients. Mix the soy, hoisin, water, sugar/honey, ginger, and garlic in the bottom of the crockpot. Add in the chicken breasts. Cook on high for 4 hours or low for 8 hours. I shredded the chicken about an hour before we were ready to eat, so all of the chicken had time to soak in the sauce. Then mix some cornstarch with a few spoonfuls of sauce from the crockpot and make a slurry. Pour it into the crockpot and let cook/thicken for a half an hour to hour.

Serve over rice. Enjoy!
