Roasted Pumpkin seeds

 

One of my favorite things about carving pumpkins is roasting all the pumpkin seeds that we get out of them! It is one of my favorite snacks – along with being delicious, they are healthy for you too!

While we are cleaning out the pumpkins, we put all the seeds into a colander, and once we have all the seeds, wash off the remnant pumpkin guts 🙂 I then spread all the seeds out onto my jelly roll baking sheet. Any pan or baking sheet with sides will work. spread them out so there is just one layer of seeds on the bottom of the pan.

Here is where you can get inventive. I simply spray the pumpkin seeds with cooking spray and then sprinkle with salt. You could put any seasonings that you would like on them – anything you think would taste good! I am a purest, and just like plain salt…

I then put them in the oven at 350 for about 20ish minutes. Doesn’t take too long. You will know they are done when they JUST start to turn brown. Last year, I left them in too long and ruined them 🙁 This year, I was sure to take them out as soon as they started to get brown.

Cool. Then eat and enjoy! Mmmm… I think I shall go downstairs for another handful 🙂

I used to not bother with the roasted pumpkin seeds, thinking that I would not like them, so why bother. Then one year, I decided that I would try roasting the pumpkin seeds – I mean, what did I have to lose? All it took was that one time to get addicted to these delicious treats! So go ahead, it is really easy, and the results are worth the few extra minutes it takes to clean the seeds and pop them into the oven!
