Spinach Artichoke Dip Pasta

 

I adore Spinach Artichoke Dip. There is a restaurant in the town that I live in that makes the BEST dip. I try it in cities where ever we go, but nothing comes close to their dip!

Well, I love spinach, artichoke dip and I make a fantastic Pizza that pays homage to my favorite appetizer. So why not add some pasta and make another dinner out of it? YUM! Plus I always consider it healthy – I mean Spinach is in the name, right?? 😉

 

Ingredients:

 

    • 14 oz of Pasta – I used penne
    • 1 Tbsp Olive Oil
    • 1 Cup of Chopped Onion
    • 3 Cloves of Minced Garlic
    • 1 Cup of reduced fat Sour Cream
    • 4 oz of softened, low-fat Cream Cheese
    • ¾ Cup of Parmesan Cheese
    • 10 Oz of frozen Spinach – thaw and squeeze excess moisture
    • 13.5 Can of Artichoke Hearts – rinsed and chopped
    • 1 Cup of Mozzarella – or 1/2 and 1/2 Mozzarella and cheddar
    • ½ Teaspoon of Salt
    • 1 Teaspoon of Pepper

 

Directions:

 

Preheat Oven To 425. Spray a 3qt baking dish with cooking spray.

 

Cook pasta according to the box. Keep about ¼ Cup of the Pasta Water before you drain the cooked pasta. Heat your oil in a saute pan and cook onions for 8 – 10 minutes. Add garlic and cook for one minute. In a large bowl, mix Sour Cream, Cream Cheese, Parmesan, and the sauteed onions and garlic. Add Pasta and mix together. Then, stir in spinach, artichokes, ¼ cup of cooking liquid from the pasta, salt, pepper, and ½ Cup of the cheese. Pour into your greased casserole dish. Place the rest of the cheese on top. Put in the oven until baked through and golden brown on top, about 15 minutes.

 

Yum! Eat with some garlic bread and enjoy for a delicious dinner!
