Chicken Cordon Bleu Casserole

I’ve been wanting to make this casserole for awhile now. I have a few friends that have raved about the recipe. I love chicken cordon bleu, but it is just a mess/hassle to make the traditional way. I LOVE my Crockpot version of it – it is amazing!

The casserole was pretty tasty! My husband and kids were thrilled with it, because they love stuffing! My husband was excited about taking the leftovers for lunch today – he loved the casserole! I’ll be making it again for sure – especially when we have some ham leftover. My son said it reminded him of Sheperd’s Pie, which is one of his favorite dishes!

It is easy to make and delicious. It is a winning recipe here in our family! I didn’t pay attention to the recipe and put it in a 13×9 pan, instead of a 2qt dish. When I went to put the stuffing up on top, I realized that there was no enough to cover the top. Easy fix – make another box of stuffing! My family loves stuffing, so they were thrilled at my mistake! I’ll probably have to make it that way from now on…

 

Ingredients:

  • 1 pkg. flavored stuffing mix (plus ingredients you need to prepare it)  or 2 pkgs. if you love stuffing!
  • 1 can condensed cream of chicken soup
  • 1 tsp – 1 tbsp mustard
  • 1 lb chicken breast, cubed
  • 1 pkg. frozen mixed vegetables, or any other veggies you’d prefer  – fresh or frozen
  • 1/2 lb ham – cubed
  • 1/2 lb swiss cheese – sliced or shredded

 

Directions:

Heat oven to 375. Grease a 2 qt baking dish for one box of stuffing or a 13×9 pan for 2 boxes of stuffing (if you are a fan of lots of stuffing!)

Cook Stuffing according to box directions. Cook your chicken. I cooked it in a bit of garlic and Montreal steak seasoning. Add in the veggies until un-frozen. Add the cream of chicken soup, ham, and mustard (use more or less, depending on flavor preference). Mix well, and pour in the bottom of your prepared pan. Top with the swiss cheese. Add the Stuffing up on top.

Bake for 30-40 minutes until warmed through. Eat and Enjoy!
