I wanted to make a sandwich with the slow cooker, because I had some hamburger buns that needed used and I had seen a few recipes that I wanted to try out. I decided to try the recipe with cream cheese, ranch, and bacon. I mean, what is not to like about that? It was a good choice because they were delicious!
Some of the recipes for this said you could use bacon flavored cream cheese in it. I didn’t have any, but I am sure it would be good. I am sure any of the savory cream cheeses available would be good, but I would only use ONE block that is savory, and the other just a regular block of cream cheese – no need to overwhelm the dish. I also used turkey bacon in the sandwiches, because that is the kind I like… It is easy enough to cook up a bunch of bacon and just keep it in the fridge until ready to use. Then it will just get heated at the end with the chicken.
I also added cheese on the top – since I had seen others do this for the recipe. I think you can skip this step. I don’t think the extra cheese is needed. It is delicious, but if you want to save a few calories, skip adding the cheese on top
Ingredients:
- 2 lbs boneless chicken breasts
- 2 (8 oz) blocks cream cheese (I used low fat)
- 2 (1 oz) packets dry Ranch seasoning
- 8 oz bacon, cooked crisply and crumbled
- Cheese – optional
- Buns or some type of bread

Instructions
- In a slow cooker combine place chicken, cream cheese, and Ranch seasoning.
- Cook on low for 6-8 hours or on high for 4 hours, until chicken shreds easily.
- Once chicken shreds stir with a large fork or spoon, so the chicken shreds and all the ingredients combine.
- Add in crumbled bacon and stir to incorporate.
- If you want cheese on top, simply place the chicken on your bread, sprinkle with shredded or slices of cheese and place under the broiler for about a minute or so.
- Eat and enjoy!
