Double Chocolate Pudding Cake

 

I have been making this Double Chocolate Pudding Cake for many years now. Somehow, I usually end up making it on Christmas Day for dessert. Probably because it is super easy to make and delicious. I like things quick on Christmas, so I can spend my time with the family! This Christmas, I totally forgot to take a picture. So I went online to find the recipe, and it is not to be found on the website I originally found it on! Yikes! Actually, it was originally from a magazine, but the website for that magazine does not have it. So I really want to make sure that I get it written down on here, mainly for me to have in the future – since my magazine copy is looking VERY “used” lately, and who knows how much longer it will last! So I just snagged the picture from when I pinned the recipe years ago (and the pin no longer leads to the recipe 🙁 )

This recipe is so easy to make. It is a great dessert to have your kids help with, because it is simple to pull together. And oh.my. It is sooooo good! I am wanting some right now just thinking about it!

 

Ingredients:

  • 1 cup flour
  • 2/3 cup sugar
  • 4 tbsp unsweetened cocoa powder, divided
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup brown sugar
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 1/2 tsp vanilla
  • 3/4 cup semisweet chocolate chips
  • 1 1/2 cup boiling water

 

Directions:

Spray a 2qt baking pan with some cooking spray. Heat oven to 350. In a bowl, mix the flour, sugar, 2 tbsp of the cocoa, baking powder, and salt together. Make a well in the center and add the egg, milk and butter, and mix the whole mixture together, until well blended. In a small bowl, mix together the other 2 tbsp of Cocoa and the brown sugar until evenly combined and any lumps are broken up. Pour the cake batter in the baking pan. Top the batter with the Chocolate Chips. Sprinkle the Cocoa and brown sugar mixture on top of the chocolate chips. Pour the boiling water over the top. Place in the oven and bake for 30 minutes. Set a TIMER! Since it is a lava/pudding cake, it will be liquidy and hard to tell if done. Simply remove when the timer goes off. Serve with some whipped cream or vanilla ice cream! YUM!! ENJOY!
