Ok – don’t hate me if your New Years Resolution is to lose weight. I’m Pregnant and I blame cravings. I’ll be there with you about six weeks after this kid decides to make an appearance.
On Sunday, I was remembering these Homemade Nutter Butters I had made awhile ago. Of course, I then had to make them. YUM! I looked up the recipe I used to make them and oh.my! The cookie recipe called for 1lb of butter – in just the cookies!!! Yeah, I could NOT bring myself to make something with a 1lb of butter in it, no matter if I am pregnant or not.
I looked up other recipes and they all called for similar amounts of butter – what the?!?! I mean they have Peanut butter in them, there is no need for so much butter. Then I thought to myself that I have a Peanut Butter cookie recipe that I love and I have a Peanut Butter Frosting that I love (which was very similar to the other recipes – only you guessed it – less butter), so I thought I would marry the two recipes…..
OH YES! WOW! They turned out soooooo good! Surprisingly, they tasted better once they cooled. I thought a warm cookie would be the best – I mean that is usually the case. But I had a Nutter Butter the next morning, and I think it was even better than the night before! Go Figure!
You should only need a half a batch of frosting. I made a whole batch and have lots left over – I think I may make some homemade oreos and fill it with the rest of the frosting. Don’t skimp on the frosting in the middle of the cookies though – Mmmmmm…..
Make the recipes according to the directions. If you don’t want the PB cookies flattened (like traditionally done), simply don’t smash the cookies with a fork – like I did in these pictures. If you want a flatter cookie, flatten them with a fork! Just depends on whether you want a fluffy, smaller cookie or a larger, flatter cookie! Once the cookies are cool, place frosting in between 2 cookies – don’t skimp on the frosting – and make them into a sandwich. Eat. Enjoy. Try not to eat them all at once…..
