White Bean Burgers

 

We’ve been making these bean burgers for many, many years now – probably one of the first recipes we really enjoyed after getting married (15+ years ago). I love “alternative” burgers, as I have mentioned many times on here (and posted several recipes – hello eggplant burgers! Quinoa burgers anyone?) and these burgers are simply delicious and the first alternative ones we ever made.

I now have doubled the recipe – as we need more burgers. I will post the doubled recipe here – if you want only 4-5 burgers, simply cut the recipe in half.

My 5-year-old (you know, the one that won’t eat ANY dinner – except ravioli, pancakes, and french toast), actually gave these burgers a thumbs up!!! What?!?! He said it was good! Until I told him it was a BEAN burger. Then he said it was disgusting. We all just laughed because we knew we had gotten him. Everyone heard him say he liked them, so we told him he can’t change his mind. HA! Kids….

I also totally forgot to take pictures of the burgers! Oops! Those are pictures of a couple of leftover burgers… I think I am going to have one of those for lunch, because I am craving them again, now that I have written about them….

 

Ingredients:

  • 2 14-15oz cans of Great Northern Beans (or another white bean) – Drained and Rinsed
  • 2 eggs
  • 2-4 Green Onions
  • 3 -4 cloves of garlic
  • 2 cups of Italian Bread Crumbs
  • 1 can of green chilies (optional – I don’t usually use these, but if you want a little more spice/flavor)
  • Cornmeal
  • Olive Oil
  • Burger toppings – Lettuce, tomato, cheese, ketchup, Mayo, etc. etc.
  • Burger Buns

 

Directions

Place the Beans, onions, and garlic in your food processor. Mix until slightly broken up. Then add-in the eggs and bread crumbs (and chilies if you are using them), and mix until thoroughly combined. Divide into 9-10 burgers (4-5 if making a half recipe) and smash into patties. Place some cornmeal on a plate, and then coat your patties in the cornmeal. Heat some olive oil in a pan (medium high) and place your cornmeal-crusted patties in the pan. Flip patties when they start to brown. Place cheese (if desired) on the pattie to allow to melt after you have flipped it. Remove from pan and place on bun, once other side is also browned. Top with favorite burger toppings.
