Triple Chocolate Pudding Cookies

 

I never thought a cookie could ever come close to my love of Chocolate Chip Cookies. I was wrong! If these Triple Chocolate Pudding Cookies don’t beat my love of Chocolate chip cookies, they come awfully close to them! They were soooo freaking good! My only regret after making them was I didn’t make a double batch (since it was my first time, I didn’t want to make too many)

These will be on my regular Friday baking rotation. Simply one of the best cookies I’ve had…. Not sure I can even say enough good things about them. I just want to rave about how good they are! Chocolatey, gooey, soft, chewy, and plain DELICIOUS!  Ok, now I want to go make another batch RIGHT now! Seriously, go make some… Then tell me how much you love me (or maybe hate me… ’cause your waistline might not like it!)

 

Ingredients:

  • 3/4 cup unsalted butter, softened (1 1/2 sticks)
  • 2 oz Cream Cheese (I used Low fat)
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 packet instant chocolate pudding mix, about 3.7 to 3.9 ounces (not sugar-free and not ‘cook & serve’)
  • 1/4 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tsp baking powder
  • pinch salt
  • 1 1/2 cups semi-sweet chocolate chips

 

Directions:

Cream the butter, cream cheese, and sugars together. Add in the eggs and vanilla. Mix in the pudding mix and cocoa powder and mix until combined. Add in the flour, salt, baking soda and powder and mix until well combined. Add in the chocolate chips. Refrigerate at least 1-3 hrs, or overnight.

Heat oven to 350. Grease baking sheet. Bake cookies for about 10 minutes, until set, but not too done, if you like them soft and gooey! YUM! Try not to eat them all in one sitting!
