Easy Cajun Shrimp Alfredo

 

Shrimp was on sale at Fred Meyer again this week. We love Shrimp around here. I usually make my garlic shrimp because it is soooo delicious and super easy to make. Sometimes I make a fried shrimp (which I have yet to blog), but I simply didn’t have the time to bread each shrimp (I have a 3 week old who likes to be held, not to mention 4 other kids!), so I decided to try out a new Easy Cajun Shrimp Alfredo.

It was a huge success – YUM! I’ll have to add it to our rotation when shrimp is on sale. Not only does it taste delicious, it is pretty easy to make – on the table in about 15 minutes. I love fast, easy, and delicious meals! This easily feeds our family, with leftovers for my husband for lunch. It made enough sauce for even more pasta, if you want some more pasta – which I might next time, because we seemed to have more shrimp than pasta leftover.

 

Ingredients:

  • 1lb Shrimp – peeled and deveined
  • Olive oil
  • Garlic – minced and granulated
  • Cajun seasoning
  • 1 box (about 14oz) of Pasta – I used Angel Hair. Fettuccini, spaghetti, Penne, lots of different types will work!
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups of milk
  • 1/2 tsp Thyme
  • 1/2 tsp Oregano (Or Italian Seasoning)
  • 1/4 – 1/2 cup cream or half and half
  • 1/4 cup Parmesan Cheese
  • Salt and Pepper to taste

 

Directions:

Heat Oven to 400

Put a large pot of salted water on to boil

On a baking sheet, spread your shrimp out in a single layer. Sprinkle Cajun Seasoning and some granulated garlic. Pour a little olive oil and then toss the shrimp and re-spread out. Cook in the oven until pink and firm – about 6-8 minutes.

When the water starts to boil, cook your pasta according to box directions. Drain when done cooking

While the shrimp and the pasta are cooking, melt the butter in a saucepan. Add in some minced garlic (2-4 cloves, depending on taste). Whisk in the flour, creating a roux and cook for a minute. Slowly whisk in the milk, making sure to incorporate the milk throughly before adding more. Add in the Thyme and Oregano. Pour in the half and half/cream (I just used some leftover from my fridge, so no need to be exact) and Parmesan and cook until sauce starts to thicken, about 1-2 minutes. Add Salt and Pepper to taste. Pour over the pasta and toss to combine. Add in the shrimp and enjoy!
