Crockpot Peanut Butter Chicken

I am behind in blogging many new, great recipes that we have made. Hopefully, I will get some time and get them written up! I write all these recipes on here, mainly so I remember them and can find them when I want to make them again!

Thai Peanut Noodles is one of my kid’s FAVORITE meals. Add in some Steam Buns, and you have one of the best meals possible. It is really an easy meal to make as well. I remember one Sunday, my 5 year old knew we were making Peanut Noodles and Steam buns for dinner, after church. During Sacrament meeting, he loudly stated. “Oh Man! I can’t wait for dinner. Steam buns and Peanut noodles are soooo yummy!” The people in front of us just laughed.

Well, on Pinterest, I saw a Crockpot Peanut Butter Chicken meal. I figured it was worth a try – you know how much I LOVE my crockpot! Even though it is an easy meal to make on the stovetop, figured I might as well try in the crockpot, because I love dinner cooking while I get other things done!

It was a BIG success! It is delicious in the crockpot. Just don’t cook it too long or the Peanut Butter will probably not turn out well. While I will still be making my original recipe, This is going to be another GREAT go-to crockpot meal to at to our repertoire.

 

Ingredients:

  • 1-2lbs Chicken Breasts
  • 1/2 cup Peanut Butter
  • 1/4 cup Soy Sauce
  • 1/4 cup Honey
  • 1/4 cup Rice Vinegar
  • 1/2 cup Chicken Broth
  • 3 cloves minced garlic
  • 1 Tbsp Lime Juice
  • 1 Tbsp Crushed Red Pepper

 

Directions:

Mix all the ingredients (except the Chicken) in your crockpot. Place chicken in the crockpot. Cook on low 4-6 hours or until chicken is soft and easily shredded. Shred the Chicken and allow to soak up the juices! Serve with Rice or Pasta!
