Another great crockpot meal – YUM! It is one of the most popular pins on pinterest. We all really enjoyed the Crockpot Garlic Parmesan Chicken. Even my “I hate everything that ever gets made” 6 year old gave it a “medium” on his rating scale, which is pretty much as good as anything gets.

Serve with rice or mashed potatoes. Or serve with rolls and pasta. It is creamy, flavorful, and delicious. Another great crockpot meal to add to our repertoire. I love having easy, yummy, go to meals with ingredients I always have on had. Not to mention how much I love my slow cooker. Seriously, next to my Kitchen-Aid, my favorite appliance in the kitchen!

 

Ingredients:

  • 1-2 lbs of chicken
  • 1/2 cup (1 stick) of butter, softened
  • 1/2 cup mayonnaise
  • 1/2 cup Parmesan Cheese (I also used some Italian blend cheese with mozzarella, parmesan, and like 2 other cheeses)
  • 6 garlic cloves, minced
  • 1 tsp Italian seasoning

 

Directions:

Place chicken in a slow cooker and cook on high 3-4 hours or low 5-6 hours. In a small bowl, mix the butter, mayo, parmesan, garlic, and Italian seasoning. Shred the chicken and add the sauce to the crockpot. Cook on high another 30 minutes to an hour.
