Crockpot salsa ranch chicken and pasta

I didn’t get any great pictures of this Crockpot salsa ranch chicken meal, but it was tasty. My 13-year-old daughter loved it. Speaking of teenage girls, I know they talk about teenage boys eating alot, but have you seen teenage girls?!?! Man, they can pack it AWAY! After spending years working with teenage girls, I know they can eat just as much (if not more!) than the boys! You go girls!

Anyway, back to the Crockpot salsa ranch chicken and pasta, the whole family loved it. If you wanted, you could boil the pasta the night before or in the morning and just toss it in the slow cooker a few minutes before you eat to warm it up, if you don’t have time to make it before eating. Of course, making pasta only takes a couple of minutes, so it is an easy addition to the meal.

If you don’t want pasta, just eat it over rice or mashed potatoes. You can also use powdered ranch or the liquid kind – both work well! So lots of options with this one recipe!

 

Ingredients:

  • 1-2lbs of chicken
  • 1 can of cream of chicken soup
  • 1 cup of salsa
  • garlic – to taste
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing or 1 pkg. dry ranch seasoning
  • 1 box of pasta, made according to box directions

 

Directions:

Place chicken, cream of chicken soup, salsa, and garlic to crockpot. If using dry ranch season mix, add it now as well. Cook on low 4-6 hours, high 8-10 hours. About a half an hour before eating, shred chicken, add in the sour cream, ranch dressing (if didn’t use dry seasoning), and pasta to crockpot and heat through.
