German Apple Pancake

We love breakfast for dinner or “Brinner.” We are not big breakfast people, but we love breakfast foods. So we just eat them for dinner. German Apple Pancake is one of our favorites, because it mixes a delicious fluffy pancake/crepe like food and candy like apples.

Eat with some sausage or bacon. Top with some whipped cream – YUM!

You can make German Apple Pancake in a big pan like I did, or in muffin tins. I used do muffin tins, but now that we have more kids, I just double the recipe and make one big pan, because I am too lazy to fill each separate tin and then clean after dinner. So laziness…

 

Ingredients:

  • 4 tbsp butter, divided
  • 5 tbsp granulated sugar
  • 2-3 apples
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 2/3 cup flour
  • 1/2 tsp salt
  • 3 Eggs
  • 3/4 cup milk

 

Directions:

Heat oven to 450. If using a muffin tin, spray the tin with some cooking spray

Peel, core, and chop the apples into bite-sized pieces. Melt 2 tbsp of butter in a skillet over medium heat. Add in the apples. Add the brown sugar and cinnamon. Saute the apples until softened and caramelized, about 10-12 minutes. If using muffin tin, divide the apples among the muffin cups.

Using a food processor (or blender), combine the flour, salt, sugar, 2 tbsp of melted butter, eggs, and milk. Process for 3 minutes. Pour the batter over your apples (either in the saute pan or muffin tins).

Place in the oven. Reduce heat to 400. Bake until pancake(s) puff up, 15-20 minutes.

Dust with powdered sugar, if desired and serve with whipped cream.
