Chicken Bacon Ranch Bake

I picked myself up a touch-screen laptop for a great price at a Black Friday sale. I thought it would help me keep up with work and writing. I was wrong. A touch screen only makes it easier for an infant to touch the screen and mess everything up. Oops! He just loves to touch everything. If mommy is typing or playing with something, it is always better than what he has. *sigh*

Well, we tried another new recipe that we all enjoyed. The Chicken Bacon Ranch Bake was pretty tasty – I even ate the leftovers the next day. My daughter is the one that made it – we are trying to get our older kids to make more and more meals. We want them to be able to cook when they head off to college! I love all things chicken, bacon, and ranch, and this Chicken Bacon Ranch Bake was another hit to add to our repertoire. Plus easy for kids to make and we always have the ingredients on hand!

 

Ingredients:

  • 1 can crescent rolls
  • 1 lb cooked chicken
  • 8 slices of cooked, crumbled bacon
  • 1 cup mayo
  • 1 Tbsp dry Ranch dressing mix (or 1 pkg)
  • 1-2 cups cheese
  • Green onions, tomatoes (optional)

 

Directions

Heat oven to 400.

Spread the crescent rolls on the bottom of a 13×9 pan, sealing together all the edges. Bake for 10 minutes. Meanwhile, mix the mayo and the ranch dressing together in a bowl. If you haven’t, cook your chicken (I cooked mine in garlic and Montreal steak seasoning) and bacon. Crumble the bacon, chicken, and half of the mayo together until combined. Spread the remaining mayo mixture over the crescent rolls, once out of the oven. Spread the chicken/bacon mixture on top. Sprinkle as much cheese as desired. If you’d like, you can then top with green onion or tomato. Bake for 10-12 minutes until cheese is melted and heated through.
