Instant Pot Lentil Tacos

I finally made lentil tacos. I’ve been wanting to do it for so long, and just kept forgetting. Why did I wait soooo long?!?! They were so freaking good!!! YUM YUM  YUMMY!!! The kids loved them too. I am totally on a lentil kick lately. I am going to be hitting up Pinterest for more ideas…

Now, you don’t need an instant pot to make these. Can easily make it on the stove top! Next time, I am reducing the stock by a cup – I put too much in, still getting used to the pressure cooker. So I will reflect that in the recipe below. It was a bit liquidy with 4 cups of stock. My husband liked the consistency, though! So if you want a runnier taco filling, use 4 cups, it tastes great! With this consistency, I found I didn’t need cheese. Say what?!?! No cheese – from me?!!? As crazy as it sounds, I didn’t put cheese on it and it was still fantastic!

I’ll give you direction for your instant pot or on your stovetop. Easy either way and DELICIOUS!! Plus super inexpensive. 1 cup of lentils is like $.50 (I can buy a pound of lentils for under $1), and we had enough for leftovers! PLUS super healthy! Healthy, cheap, delicious, and easy to make!

I plan to eat it with a spoon for lunch. Actually, I could have just sat with a spoon and eaten straight out of the pot. It was seriously that good! Eat it in a tortilla, taco shell, chips, or it would be super good in a salad with chips – simply shake the lentils with the salad and you don’t even need dressing. My husband and I came up with that after dinner and totally fell in love with the idea! Mmmmmm good!

 

Ingredients:

  • 1 small onion finely diced, or dried onion (to taste)
  • garlic to taste – 2-4 cloves
  • 1/4 cup taco seasoning (homemade or Costco) or 1 pkg. taco seasoning
  • 1 cup dry lentils
  • 3 cups chicken or vegetable broth
  • 1/2 cup salsa or Picante sauce
  • Tortillas, chips, taco shells, or salad
  • toppings of your choice – avocado, sour cream, lettuce, tomato, olives, salsa, cheese, etc.

 

Directions:

Instant Pot: Place all ingredients in the pot (except tortillas and topping, obviously)

Place Instant Pot on for 20 minutes on the beans setting:

 

 

 

 

 

 

 

Use the quick release method when done and stir. Serve with as desired!

Stovetop:

Cook the onion in a large saute pan (that has a lid!) in some olive oil until soft and add the garlic and saute another 2 minutes. Add the lentils, taco seasoning, salsa, and broth. Bring to a boil. Reduce heat, COVER, and simmer 30-45 minutes until lentils are soft (for me, the amount of time it takes for lentils to soften varies, so check after 30 minutes and then go longer if not yet softened). Add more liquid, if the liquid has been absorbed, but lentils aren’t soft yet. Once soft, cook uncovered for about 5 minutes, to thicken the sauce. Serve as desired!
