Perfect Instant Pot Hard Boiled Eggs!

I have been enjoying my Instant Pot, but it is not as “life changing” as I kept hearing it would be. It is nice, but honestly, I could do everything before. It makes thing more automatic and hands-off, but otherwise, I could accomplish everything in other ways about as well…

… Until today! I am now fully an Instant Pot Convert. I made Hard Boiled Eggs in the Instant Pot. (I guess they are technically not “boiled”) It’s not that they were done faster than on the stovetop, because when you consider the time it takes for it to pressurize, cook, and depressurize, then it isn’t that much faster. What made it wonderful was that the shells were JUMPING off the eggs. I have tried every trick to get shells off hard boiled eggs without ruining them. Baking soda, ice baths, perfect timed cooking. All work to a degree, but I always still get one or two (or more) messed up eggs. It is inevitable.

Today though? ALL 12 eggs I put in, came out PERFECTLY. The shells came off each egg without a problem. As you can see from the picture, some were coming off before I even took them off! It was AMAZING. I shall never do hard boiled eggs any other way again. I couldn’t believe it. Perfectly, de-shelled eggs. I was finally impressed. This sold me on the purchase of my Instant Pot.

I thought I did 6 minutes in the Instant Pot, but then I looked at the picture I took of the timer, it says I did 5 minutes! Glad I took the picture! Otherwise, I totally thought I did 6 minutes. Although, one more minute probably wouldn’t make a huge difference. I then let them set for 5 minutes, then used the steam release. Then tossed them into an ice bath to stop cooking. Some more shells started to come off in the ice bath. Then did the easiest de-shelling of eggs ever!

 

Directions:

Place your eggs in the rack that came with your Instant Pot or in a Steamer Basket. I did 12 eggs. You can do more or less. Add in a cup of water to the bottom of your pot. Use the steam setting for 5 minutes.

Once cooked, allow to sit on the “keep warm” setting for another 5 minutes.While waiting, create an ice bath for the eggs in a large bowl. Then use the steam release valve to release the rest of the pressure after 5 minutes on te “keep warm” setting.

Place the eggs in the Ice bath. Let sit in the ice bath 5 or more minutes (they can sit in it as long as you’d like) and then place in the refrigerator for later use, or peel the eggs. The shells should easily come off!
