Easy Fried Rice

One of my kids’ favorite meals is Fried Rice. I like it because it is easy and delicious. Plus it is kind of a “kitchen sink recipe.” You can put whatever leftovers you have in the fridge in there. Leftover veggies or protein will usually work! Leftover rice works too! I often use frozen mixed vegetables cooked in some Yoshida sauce for the veggies in our fried rice. My kids love it so much, they ask for it in their lunch the next day at school.

I love the fried rice at Benihana. It is sooo good. I figured out their secret is the garlic butter they put in at the beginning. So I take a stick of butter for our 3 cups uncooked rice, and mix it with tons of granulated garlic. I don’t measure the garlic, just add lots and mix until it looks good. Seriously, this is the secret to the BEST fried rice. Trust me. It’s worth it…

Garlic Butter

 

Ingredients:

  • 1 cup uncooked rice per 2 people (I use 3 cups for 6 people – we have plenty of leftovers too!)
  • 2 cups of water per 1 cup of rice
  • 1 scrambled egg per person (Or more if you really like eggs!)
  • Veggies – frozen or fresh. Whatever you have!
  • Soy Sauce
  • Yoshida Sauce (optional)
  • Cooked Chicken, Sausage, Tofu, or any protein of your choice. Leftovers work too!
  • Garlic butter – 1 stick worth for 6 people. Can adjust up or down to your preferences. I take a softened stick of butter and mix it with lots of granulated garlic.

 

Directions:

Cook your rice in water – according to directions on your rice bag. I just use a rice cooker and don’t worry about timing it! I cook my veggies in some Yoshida Sauce. Cook your scrambled eggs. Place your rice in a wok and stir in the garlic butter until all the rice is well coated. Add in your protein and veggies. Pour in soy sauce until all the rice is coated. Don’t add in too much at first. You can always add more, but can’t take away. Once heated through, add in your scrambled egg or anything else you’d like in your fried rice.
