Instant Pot Pulled Pork

I still have many more vacation posts to catch up on, but I also have recipes to catch up on! I’ll get them all done eventually! We’ve made our favorite pulled pork in the Instant Pot several times now, and it works great! The best part is I can’t stand the smell of cooking pork. Weird, I know! I love to eat it, but the smell does me in! Cooking it in the Instant Pot cuts down on the amount of time that I have to smell it! Ha! I may have made it this last time JUST to eat the leftovers on the AuGratin Potatoes (still haven’t taken a picture). It is just sooooo good!

I cooked it from frozen. If yours is thawed, you may not need to cook it as long.

 

Ingredients:

  • Pork Roast – 3-6lbs
  • 1/4 Cup Worcestershire sauce
  • 1/4 cup soy sauce
  • 2 tbsp honey or sugar
  • 2 tbsp apple cider vinegar
  • 3 tsp lemon juice
  • 1 tsp mustard
  • black pepper – freshly cracked
  • Garlic – to taste. 3-4 cloves
  • BBQ sauce – if desired

 

Directions:

Place all ingredients, except BBQ Sauce, in your Instant Pot. Now, mine was frozen, so I cooked on the meat setting for 50 minutes. If yours is not frozen, then you can probably reduce cooking by 10 minutes. Allow to naturally depressurize so the meat has time to rest. Shred the pork in the juices. YUM!
