Instant Pot Lentil Sloppy Joes

I have mentioned my love of lentils. Well, somehow it didn’t occur to me to make them into Sloppy Joes until this week. Doh! Well, I made my favorite Sloppy Joe recipe, and just substituted Lentils and cooked it in the Instant Pot. So EASY! So DELICIOUS!

I decided to try to record it just before I started making it. Well, I need to work on my recording skills! ha! I’ll get better eventually, but hey, it’s my first try. If I can remember to hold it the right way for each clip, that would help a lot *eye roll*  Or I’ll use the new camera I got the kids that arrived tonight and I don’t have to worry about holding it incorrectly. Oh well.

 

Ingredients:

  • 1 cup lentils
  • 3 cups broth (chicken, vegetable, or beef) OR Water
  • 1 small chopped or grated onion
  • 1 bell pepper, chopped (I did not have one when I made the video. Tastes fine without it)
  • 1/4 cup brown Sugar
  • Montreal Steak Seasoning
  • 1 tbsp apple cider vinegar (or regular vinegar)
  • 1 tbsp Worcestershire sauce
  • 1 8oz can tomato sauce
  • 1 6oz can tomato paste

 

Directions:

Add all ingredients to the Instant Pot. Turn Instant Pot on the Beans setting for 20 minutes. Either let naturally de-pressurize or manually depressurize. If it is too liquidy, simply use the saute button and saute until you get your desired consistency. It took me about 3-4 minutes of sauteing. Serve on hamburger buns!
