Peanut Butter Blossom Cookies

 

I went to Safeway this morning (which I haven’t been to in months) and considered buying some cookies they had on their $5 Friday sale in their bakery. Then I remembered I don’t like store-bought cookies and told myself I would make some cookies when I got home.

When I got home, I remembered I had picked up several bags of Hershey’s Kisses for $1 after Christmas, with the idea of making these Peanut Butter Blossom cookies. So I decided to make them today.

I ended up just using the recipe on the back of the Kisses bag! I found others online, but the one on the bag had less sugar and more peanut butter in the recipe and I’m all for more PB and less sugar!

They turned out yummy! It’s been awhile since I have made these cookies (mainly because I don’t buy kisses that often! but for $1 a bag, it was worth it!).

 

Ingredients:

  • 48-54 Hershey’s kisses
  • 1/2 cup butter
  • 3/4 cup Creamy Peanut Butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • granulated sugar (optional)

 

Directions:

Heat oven to 375

Unwrap Hershey Kisses. Beat the butter and peanut butter together until combined. Add the 1/3 cup sugar and brown sugar and beat until fluffy. Add the egg, milk, and vanilla. Mix well. Add in the flour, baking soda, and salt and mix until combined. Shape into 1 inch balls (I used my handy cookie scoop). You can roll the cookie in granulated sugar if desired. I find the extra sugar unnecessary, but that is how they are “traditionally” made. (I find this step optional). Place on cookie sheet and bake for 8-10 minutes, until lightly browned. Immediately press a chocolate kiss into the center of each cookie. They will crack around the edges. Remove from cookie sheet to a wire rack and allow to cool. Enjoy! Mine made about 54 cookies, but you could get more or less depending on the size of your cookies.
