This is a great summer recipe
and for all of you that are good
and got your gardens in this summer
(*not me* :P)

I have to admit
I didn’t think I was going to like this dinner
Someone made it for us
and brought it over after I had my 2nd child
(almost 8 years ago!)
I was a bit freaked
because I am not a zucchini fan
Zucchini bread – sure!

(getting better though!)
So I was VERY pleasantly surprised
that I LOVED this pie!
It is a delicious, light dinner
We liked it so much
I asked for the recipe
and not only did they give us the recipe
they gave us a Zucchini from their garden
to make some more
(seriously how nice is that?!?!)
I also happens to be the same person
that gave me the 5 minute pizza dough recipe
so she is a bit of a genius!
Ingredients:
- 3 cups grated Zucchini
- 1 small onion, chopped
- 1 cup flour
- 1 cup grated Mozzarella
- 3 eggs, beaten
- 1/4 cup oil
- 4 tbsp Parmesan Cheese
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp pepper (or I just crack some fresh stuff into the mixture)
Directions:
Heat oven to 350.
Tip: When grating your zucchini, grate the onion while you’re at it! Make the Food Processor do the work!
Mix all the ingredients. I find it helpful to toss the zucchini with the flour first to help avoid lumps. Pour into a greased deep dish pie pan (just spray the pan with some Pam) and bake for 45-50 minutes, or until golden brown on top
