I think I am on a pumpkin kick right now or something! I needed to make something to take to an activity, and these Healthy Pumpkin Cupcakes sounded delicious and healthy, so I thought I would give them a try. Plus, it doesn’t get any easier than this recipe! 3 ingredients, mix, and done. Easy and delicious? I’m sold!
Now to make them less healthy, top them with my delicious Cream Cheese Frosting and you’ve got a really yummy dessert. With the cupcake being so healthy, you can indulge in the delicious frosting, right??
Ingredients:
- 1 boxed Spice Cake Mix
- 4 oz (1/2 cup) unsweetened applesauce
- 1 15oz can Pumpkin Puree
- Cream Cheese Frosting (optional)
Directions:
Heat oven to 350. Spray 2 12 count muffin pans or line with cupcake paper.
Pour all ingredients in the bowl of your stand mixer or into a bowl and use a hand mixer. Mix together 2-3 minutes until mixed well and fluffy. Scoop the batter into the cupcake pans. I use my cookie scoop – works really well! Bake for 15-20 minutes until cupcakes are baked through (toothpick comes out clean). Let cool.
If you want to make them less healthy, add some Cream Cheese Frosting up on top. YUM!!
