I saw a picture for something like this on facebook and knew I had to make it! Of course, I did my own thing for it, but the picture I found inspired me (as most Pinterest pictures do. I just go off the pictures and create from there – they are simply my inspiration)
I turned out sooooooo good! I could seriously have eaten this casserole until I exploded. It was just that good! I am craving it now as I write this. I had some of the leftovers for breakfast this morning – still as great as the first time around. I did make a few mistakes, since it was my first try, but I’ll adjust the recipe for you and for the next time I make it… Which will be soon, for sure!
This was a HUGE hit with the family. I think this is destined to become a new family favorite!! Unless I explode from eating too much next time 😉 Which may happen – the entire pan is calling my name!!
This recipe can easily be tailored up or down, depending on the size of group/family you are trying to feed. You could also make it ahead of time and leave it in the refrigerator until ready to bake! My biscuit recipe is going to give you ALOT of biscuit/bread, because I love biscuits! Feel free to use less biscuit dough, if desired.
Ingredients:
- 1 lb of Sausage (next time, I may just use my ground chicken breast, and flavor it to make my own sausage – but it was DELICIOUS with the sausage)
- 8 eggs
- 1 cup of milk
- 1.5-2 cans of refrigerated biscuit dough, or you could use leftover biscuits, or make homemade dough with your favorite recipe, or the recipe below. I used the homemade biscuit dough
- 1.5 – 2 cups of shredded cheese
Biscuit recipe:
- 4 cups of flour
- 2 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2/3 cup shortening
- 2 cups buttermilk or regular milk will work just fine as well
Directions:
Heat oven to 375 and spray a 9×13 pan with cooking spray.
Cook your sausage. While it is cooking, mix your biscuit dough, if making homemade biscuits. To make my recipe, simply combine the flour, baking soda and powder and salt in a bowl. Cut in the shortening using a pastry blender, or 2 forks, until uniformly combined in the flour mixture. Then add the milk to the mixture, until it forms an uniform batter. It is a drop biscuit dough recipe, so it will not be a firm dough.
In bowl, whisk together the eggs and the milk. Spread half the dough or use enough dough, to cover the bottom of your baking dish. Cover the dough with the sausage. Top the sausage with the cheese (save 1/2 cup or so back). Place the rest of the dough on top of the cheese and sausage. I just dropped the dough into lumps. Then pour the egg mixture over the entire casserole. You could then place it in the refrigerator and make the next day or place it in your pre-heated oven. Cook for 30 minutes, then cover  your dish and cook another 10 minutes. Watch closely. Ovens vary and your casserole may need more time to cook/set, so don’t worry if it takes more like 50 minutes to cook. I actually had to put the foil on after 20 minutes of baking, to help prevent too much browning. Once casserole is baked though, let it set for at least 10 minutes. Serve and enjoy!!!
