Oh.my! I LOVE gyros, so my husband made these gyros for me and they were so freaking good! What made the entire dish was the homemade pita bread. It was OUTSTANDING!! Seriously, just about any chicken or tzatziki would taste great in this amazing bread.
Since my husband made this, nothing is exact – except for the bread recipe. He just throws things in until it tastes good. I just asked him what he put in and he doesn’t remember 😛 Any chicken with garlic would work well. What I am really writing this out for is to remember the pita recipe, because it was THAT good!
Ingredients:
Bread:
- 2 tsp active dry yeast
- 2 1/2 tsp granulated sugar
- 2/3 cup warm water, 110 degrees
- 1/2 cup + 2 Tbsp milk, heated to 110 degrees
- 1 1/2 Tbsp extra virgin olive oil
- 1 1/4 tsp salt
- 3 cups flour (can add up to 1/4 cup more flour as needed)
Filling:
- Tazaki sauce (homemade or store bought – I get it from Costco – easy and cheap!)
- Chicken
- garlic
- coriander
- cumin
- red onion
- lettuce
- your favorite gyro toppings
Directions:
Bread:
In the bowl of a stand mixer, whisk together yeast, sugar and warm water until yeast has dissolved. Let rest 5 minutes. Add in warm milk, olive oil, salt, and 1 1/2 cups flour and fit mixer with dough hook attachment and blend mixture until well combined. Add in remaining 1 1/2 cups flour and knead mixture on low speed until blended, then increase to medium-low and allow to knead about 5 minutes longer until smooth and elastic (dough should not stick to sides of the bowl, so add more flour if necessary). Transfer dough to bowl lightly coated with cooking spray, cover with a damp towel and allow to rest in a warm place until double in size, about 1 1/2 hours.
Press dough down and divide dough into 6 – 8 equal portions. Working with one piece at a time, roll dough out into a circle on a lightly floured surface. Heat a large non-stick skillet over medium heat. Once hot, add flatbread and cook until bubbles begin to appear on surface and bottom is golden brown, then flip and cook opposite side until golden brown. Transfer to a plate, cover with foil – leaving a small opening for excess moisture to escape. Repeat process with remaining flatbread. Store in an airtight container.

Just add a little and keep adding until you get your desired flavor. A rotisserie chicken or some leftover shredded chicken from another recipe (I have lots of crockpot chicken recipes that would work!). Fill the Pita bread with chicken, tzatziki sauce, red onions, and lettuce (and any other toppings you like – tomatoes, cucumber, cilantro, olives, feta, etc.) for a wonderful gyro.
