I made these Magic Peanut Butter bars for the 4th of July. I made up the recipe myself – OH.MY.GOODNESS!!!! They were AMAZING. I wanted to mix peanut butter bars and 7 layer bars. I didn’t find a recipe for them, so I made one up myself. We ADORE Magic (7 Layer) bars – they are one of my favorite desserts. I could eat and entire pan! Now I have taken it to a NEW level of AMAZING. These are soooooo good!
The Peanut Butter Bars would be DELICIOUS on their own. Simply bake and enjoy! But adding the “magic” topping makes them addictive! Too bad these all got eaten at our 4th of July Party – because I could really go for another one right now!
Now, when I made these, they had a VERY thick crust. If you’d like to have a thinner peanut butter bar, it is EASY to half the recipe to have a thinner crust.
Ingredients:
Peanut Butter Bar – (can be halved for a thinner peanut butter bar)
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 1 cup butter
- 1 tsp vanilla
- 2 eggs
- 1 cup Peanut Butter
- 2 cups Oatmeal
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
Magic topping
- 1 can sweetened condensed milk
- 1 cup Chocolate Chips
- 1 cup Butterscotch chips
- 1 cup Coconut
Directions:
Grease a 13×9 pan with some cooking spray. Heat oven to 350
Cream the butter, sugar, and brown sugar together. Add in the vanilla, eggs, and peanut butter and mix well. Mix in the Oatmeal, flour, baking soda, and salt and mix until combined. Spread in the bottom of the pan.
On the top of the bar dough, sprinkle the chocolate chips, butterscotch chips, and coconut evenly over the top. Slowly, pour the sweetened condensed milk on top, over everything.
For the thinner crust, cook in the oven for about 30 minutes. For the regular/thicker crust, cook for 40-45 minutes.
Allow the bars to cool! I always want to dig right in, but the bars need time to set, so they need to cool for a few hours. Then cut and ENJOY!
YUM! I think I may NEED another batch of these…..
