I have been MIA from my blogs for a little bit now. We were on a 3 week vacation (DC, NYC, Philly, Hershey, etc.), enjoying summer with the kids (lots and lots of swimming!), and to be honest, I have been rather sick for the last few months. I will write more about that at a later time. I am starting to feel more like myself, my kids are back in school (all but one gone to school ALL day long!), and we are getting back on some sort of schedule, so hopefully I will get back to writing more often 🙂
My son recently celebrated his 10th birthday (while in NYC – his choice this year.. Last year he spent it at Disneyworld). I remembered this Swiss Chicken that a wonderful woman brought us from our church for dinner after he was born. I wanted to make it again, because I remembered how much we loved it at the time.
It was as good as I remembered. I doubled everything, since we have more kids (and bigger kids!) than we did then! The kids all really enjoyed it. I’ll have to keep in in our regular rotation from now on! Plus, it is super easy to throw together!
Ingredients
- 1.5 – 2lbs of chicken breasts (I used 2 very large breasts, that are split up into 3 smaller pieces each)
- 6 – 8 slices of swiss cheese
- 1 can Condensed cream of chicken soup
- 1/4 cup Milk (add more if you want it saucier!)
- 2 boxes of  Prepared Stove Top (my family LOVES stuffing, so I used 2 boxes, you can use just one, if you don’t want a thick stuffing layer)
Directions:
Heat oven to 350
Layer your chicken in the bottom of a 13×9 pan.
Layer your swiss cheese on top of the chicken
Mix the cream of chicken soup and the milk together. Pour over the chicken and swiss.
Prepare your stuffing according to the box. Then spread it over the top of your chicken. We use 2 boxes because we love stuffing and a thick layer. For the thinner layer, just make one box.
Bake for about 45 minutes or until your chicken is cooked through (it depends on how thick your chicken breasts are)
