YUM! I made these Ham & Cheese Hashbrown Waffles for dinner last night and they were soooo good! My 5 year old – who likes NOTHING – even liked them! My 10 year old said it is on of his new favorites. The Ham & Cheese Hashbrown Waffles are crispy and flavorful. They are like a potato latke, only in a waffle iron. I used some frozen hashbrowns, but you could easily just shred some potatoes.
They are crispy and flavorful. Plus, super easy to make and throw together! I used some frozen hashbrowns, but you could easily just shred some potatoes – whichever you happen to have on hand. I used up 3 different cheeses (swiss, cheddar, colby jack) that I had open and some ham that needed used from some meals earlier in the week. Basically, just put a bunch of leftovers together in the waffle iron. It was good!
Ingredients:
- 1 bag (30oz) of Frozen Hashbrowns, or shred your own potatoes
- 4 eggs, whipped
- 1.5 – 2 cups of shredded cheese (can use one type or multiple types of cheese)
- 8oz – 1lb of ham, cubed – depending on how much ham you want!
- 1 tbsp paprika
- Salt & Pepper to taste
Directions:
In a large bowl, mix all of the ingredients together. Spray your waffle iron with cooking spray. Mound up some of the potato mixture in your iron, close and cook until golden brown and crispy (time depends on your waffle iron). Done!
